Excerpt from an evaluation done by EyeSpy mystery diner Brenda Lee on One Market in San Francisco:
Our table was set neatly with a white tablecloth and napkins, silverware, wine glasses, a small candle-lit lamp, and salt and pepper shakers. Our server greeted us within four minutes of our arrival. He gave us a warm smile and said, ``Good evening, ladies. May I start you off with anything to drink? A glass of wine perhaps?''
My guest asked about the white wines, mentioning her preference for something sweet and fruity. He immediately recommended the Chardonnay Conundrum, saying it was a favorite of his. In all seriousness, he explained that there was an ingredient in it that no one really knew about, which was why it was considered a ``conundrum.'' We both smiled at this, and my guest was sold.
When he turned to ask me my preference, I asked for his recommendation among the ``Refresher'' drinks: various teas, lemonades and juices. He explained that the lemonades were blended with not just fruit juices but sparkling water and other ingredients, and then he recommended the blackberry sage iced tea, among the choices of different tea beverages. I confirmed that the tea was unsweetened and ordered the blackberry sage flavor. Before he left us to put our drink order in, he asked if we'd like water -- regular, bottled, or sparkling, picking up our wine glasses and wine menu at the same time. We said we were fine with regular and wished for lemon slices.
Within two minutes of taking away our menus after ordering, our busser brought a flat basket of warm olive and sourdough bread rolls. He announced them and gave us one of each as well as a ramekin of softened butter. A food runner came within another two minutes, delivering the amuse bouche of duck liver pa^te on toasted sourdough rounds. I found the flavor quite rich, and it whet my appetite for the rest of my dinner. . . .''
